Winter:
Lamb Shank stew

Benefits: Warms & boosts kidney, qi & blood
4 Lamb Shanks, 4 cups crushed tomato, 3 cups beef stock, 1 cup red wine, ½ cup orange juice, 2 bayleaves, 1 sprig of rosemary, 2 garlic clove, 2 tsp crushed ginger, handful goji berries, 1 onion, 1 diced sweet potato, 1 cup chopped mushroom 1 cup diced celery

Brown the lamb shanks (coat in flour) over medium heat. Use a large ceramic pot compatible for oven and add all the liquid ingredients and herbs. Stir. Add the sweet potato and mushroom. Bring to the boil. Cook on medium heat for 30 minutes. Lower to simmer and cook for 1 hr. Stir. Place in oven at 140* and cook for further 2 hrs. Enjoy!

*Serve over polenta or mash potato



Turmeric Chai

Benefits: Warms & boosts kidney, qi, blood, immunity
1 cinammon quill, 1 star anise, 1 cloves, ½ tsp liquorice root, 1 cardamon pod, 1 tbls fresh ginger, 2 peppercorns, 1 tbls fresh turmeric, 1 medjool date, 1 cup coconut milk or nut milk, 1 cup coconut water

Use a mortar & pestle to gentle bash up spices, add them and the fresh ginger & turmeric to a saucepan. Add the coconut milk and coconut water and bring to the boil, then simmer for 10 minutes. Strain the spices, adding maple syrup or honey if desire to. Enjoy!
